A delicious dish with Mediterranean flavors. Add ground meat for a heartier course.
3 tablespoons extra virgin olive oil
¼ cup pine nuts
½ onion, finely minced
1 bunch spinach, washed thoroughly
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground cloves
¼ cup dried currants
Salt and pepper, to taste
In a medium-sized skillet, heat olive oil over medium
heat. Add pine nuts and cook until they begin to color.
Add onion and cook for 3 minutes. Add spices, spinach and currants and cook until the spinach is just wilted, about 5 minutes. Season to taste with salt and pepper.
