2 large carrots shredded ( about 1 1/2 cups shredded)
1 large parsnip, shredded (about 3 cups shredded)
1 cup chopped cilantro ( about 1 large bunch)
6 scallions, chopped
1 tsp salt
3/4 tsp coriander
3/4 tsp cumin
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp red pepper flakes (optional)
1/2 cup spelt flour or any other flour of your choice
1/3 cup mayo
1/2 -3/4 cup oil for frying
Directions
Heat the oil in a skillet over medium-high heat
Combine all the ingredients in a large bowl and mix well. Working with 1/4 cup of the mixture at a time, form approximately 15 latkes and fry them 4-5 minutes per side, or until golden. Place them on a plate lined with paper towels to absorb any excess oil
