2 cups sugar snap peas, strings removed if needed
1 teaspoon vegetable oil
1-2 tablespoon sesame seeds
1 teaspoon toasted sesame oil
Ground black pepper
Bring 3 cups water to a boil in a large saucepan.
Add 1 teaspoon salt and the peas and cook until tender crisp, 1 1/2 to 2 minutes. Drain & shock in ice water and drain again.
Allow peas to dry.
Heat the vegetable oil in a skillet over medium heat until shimmering.
Add the sesame seeds and cook, shaking the pan occasionally, until seeds are light golden brown and begin to pop, 1 to 2 minutes.
Add the sesame oil and peas and cook, stirring frequently, until the peas are heated through, 1 to 2 minutes.
Season with salt & pepper to taste and serve immediately.
