Fresh, Simple and Delicious
1/4 cup green onion, chopped
1 bunch spinach, washed and cut into small pieces
*small handful of grape tomatoes halved
*Lemon balm, chiffonade- chopped into long thin strips
salt/pepper to taste
*Pita Bread, brush with olive oil & heat, cut into pie shape

Heat a small amount of olive oil in your pan over medium heat.
Sauté spring onion & spinach until wilted.
Whisk eggs, with salt & pepper. For fluffier eggs add splash of milk in while whisking eggs.
Add eggs to sauteed onion and spinach.
Scramble until eggs are almost fully cooked. Add halved grape tomatoes, and mix until eggs are fully cooked and no longer "slimey."
Top with feta or cheese of your liking and lemon balm.
Serve with warm pita bread
