Wax Beans
Add their sunny
color, excellent taste and crisp texture to stir-fries,
soups, stews and casseroles. Steam, braise,
bake, or sauté. Cook and chill colorful yellow wax
beans for a tasty addition to a variety of salads or enjoy
simply as a snack. Sauté gently in olive oil; add
favorite veggies and onion; sprinkle with seasonings for
a healthy side dish. Top hot steamed yellow wax beans with
butter to bring out their naturally good light and mellow
flavor. Whatever cooking method is chosen, cook fresh beans
as little as possible to maintain texture.
We had another opportunity this week to
enjoy young tender and crisp yellow wax beans. They can
be used like any green
bean. Clean and cut or snap off the little top, steam or
boil for 8 to 12 minutes & top with butter or olive
oil, for fun you can add a grated cheese. Or chop into
small pieces and sauté in a little olive oil starting
with onion, garlic and veggies like red cabbage & zucchini,
add beans last. |
