Eleni’s Romaine & Dill Salad
This
salad is a specialty of my aunts. It is a common Greek
salad unlike the traditional Greek salads you may have
had. There is no cheese, use lemon instead of vinegar
and everything should be cut into very small pieces.
1 head Romaine lettuce, chopped into long thin strips
1 small cucumber, quartered
plenty Fresh Dill, chopped finely
4-5 tablespoons extra virgin olive oil, or more to taste
½ fresh squeezed lemon; you can add more to taste, but be
careful to not add to much
sea salt and white pepper to taste
Mix
lettuce, cucumber, green onion and dill in a large bowl.
Add olive
oil, lemon, salt & pepper. Mix well
and serve with lemon wedges. Pairs nicely with fish. |
