Oregano Orzo Salad

go Mediterranean and enjoy some of the bin contents.
You
can be flexible with the amounts, be generous with
the fresh herbs, chives, oil and cheese and you won’t
be disappointed.
½ to
1 lb Orzo Pasta, cook per directions on package
braising greens, 3-6 handfuls loosely chopped
Fresh oregano, chopped
Green onion, chives and/or garlic scapes, diced
Mint, chopped (if you don’t have mint in your yard
ask your neighbor)
Cucumber, quartered and diced
Feta or a rustic grated cheese of your liking
Olive oil!
Cook
pasta, add greens & scapes if using to pot 2
-4 minutes before pasta is done cooking. Strain and put
into a large mixing bowl. Add green onion & cheese
and mix in. Add mint, cucumber & olive oil, mix well
and serve warm or cold. |
