Mustard Greens w/ Garlic Scapes
3
sprigs of garlic scapes, chopped into small pieces
1 to 2 bunches mustard greens, chopped loosely
1 Tbs olive oil or butter Heat
oil in a large skillet. Sauté garlic
for 2 minutes. Add greens to skillet. Cover and cook
over medium
heat for 8 minutes, stirring once in a while to coat all
the greens with garlic and oil. Sprinkle with salt.
Serve with chopped walnuts and goat cheese.
Mustard Greens are a super mineral and vitamin rich green.
They are high in beta carotene, C, K, potassium, calcium,
dietary fiber and protein. Their only down side is that
they cook down quite a bit.
